Abstract
Cassava has potential as a basic ingredient for complementary feeding. Cassava is easily accessible, affordable, and rich in energy. One approach to ensure complementary feeding meets the desired nutritional requirements is by optimizing food formulations using linear programming. This study aimed to develop a complementary feeding formulation using local cassava-based ingredients through linear programming and evaluate its acceptability. The methods involved formulation optimization using linear programming, product acceptability testing with mothers and children through hedonic tests, and proximate analysis. The resulting formulation had a ratio of cassava, coconut milk, and egg white of 7.3:6.2:11.1, respectively. In the mothers' hedonic test, the colour parameter was the most favoured, with an average score of 4. Taste and texture parameters both scored an average of 3.7, while aroma and appearance scored an average of 3.8. The results indicated that children's facial expressions had an average score of 3.87, with three panellists reporting spitting and 12 reporting no spitting. The final product contained 0.45% ash, 2.81% fat, 82.18% moisture, 9.75% carbohydrates (by difference), and 4.81% protein. In conclusion, cassava-based complementary feeding products were acceptable to mothers and children. However, based on proximate analysis, the product did not meet the specifications for complementary feeding set by the Ministry of Health, indicating the need for further research.
